DREAMY SUMMER EVENINGS

Summer (pfft) evenings are upon us and I am so into the whole thing! The beautiful summer produce, the tableware, the WINE (check out our Rosé night with Tenaya coming up, last few tickets remaining!)

My cottage summer table!

I’ve got a little recipe for you that ticks all the boxes, is delicious, summery AND aesthetically pleasing. I’ve even linked some of my favourite tableware if you fancy treating yourself to new! My favourite place to start is always the charity shops and the local vintage treasure troves we have near both Poms but you can always mix in a couple of new bits. I’m obsessed with the recent trend for bright colours, patterns and maximalist table wear and the charity shops are often full of it!

Summer Tomato and Bean stew with soft cheese

INGREDIENTS 

You will need!

One jar of giant Queen butter beans, I used Bold Beans 

  • An onion diced

  • Olive oil

  • Beautiful tomatoes, any shape size or colour. About 500g

  • Fresh basil

  • Salt, pepper and sugar

  • Any soft cheese, I used I Am Nut Ok vegan ricotta in garlic oil 

Fry your onion until soft in olive oil. Add all your sliced tomatoes and season well with salt and pepper. I always add a good pinch of sugar to tomatoes to super charge the flavour but at this time of year the toms are usually great!

When they start to give off lots of juice, turn the heat down and add your drained jar of beans. You can always add a cup of water here so you get lots of delicious sauce but adjust the seasoning to account for it.

Let the beans cook in the sauce for about 10 minutes and then take off the heat. Top with sprigs of basil, dollop spoons of your soft cheese drizzle more olive oil on and serve in the pan. I toasted some sourdough and drizzled with oil to dip, SO GOOD!!
