Summer Salads!

THE SUN IS SHINING! This is not a drill babies, we are now well and truly into British Summertime (aka best thing ever) and I am definitely switching my cooking up to match. Something about the produce at this time of year makes my heart SING and the combos I end up putting together seem to shine even more!

I made my usual weekly pilgrimage to Beanies to see what they had on offer and ended up being inspired by the sweet potatoes (maybe they dont scream Summer but I was thinking Mexican vibes, stay with me!!)

I picked up a massive bunch of coriander, some soy yoghurt and my idea was fully formed!

Mexican Sweet Potato Fiesta Salad

MEXICAN SWEET POTATO SALAD WITH GARLIC YOGHURT

RECIPE

Serves one as a main meal, 2 as a side

INGREDIENTS:

1 x large sweet potato

1 x red onion

1 x red chilli

1 tsp paprika

2 x garlic cloves

Large bunch coriander

Soy yoghurt 1/2 a large pot (you might have some dressing leftover but you can literally dip a digestive biscuit in it and its good. Don’t @ me.

Generous handful of jalapeños

METHOD:

Slice your red onion, chilli and one clove of garlic up and fry in a pan with your fave cooking oil.

Meanwhile chop your sweet potato into cubes and boil or roast. I boiled mine and it worked really nicely.

When the onion mix is nice and soft (10ish mins) add your paprika - you can used smoked paprika if you like instead - and cook for a further 3 mins until its smelling like holiday!

Add your sweet potato to the pan and toss all the onion goodness over, let the flavours mingle and the edges crisp up a bit.

Lets make our dressing - put your soy yog into a bowl and grate the other garlic clove in. Add a good pinch of salt, crack of pepper and stir it up. I find the flavour is best if you leave it to stand for a few mins!

Once your potato is cooked pour it into a bowl, drizzle over the yoghurt dressing, chuck on loads of chopped coriander and the jalapeños. You can even be posh and add a sprinkle of paprika over the yoghurt - super cheffy delish!

You’re gonna love this one, would be so good as a side or even on top on nachos there’s a thought!!
