Scandi Girl Salad!

This salad is inspired by classic Scandi flavours and is just as effortless as those chic gals on insta, perfection on your BBQ table or for a quick weeknight side.

RECIPE

Feeds 1 as a main, just add your fave protein!

INGREDIENTS

1 x jar or tin of chickpeas

2 x fresh beetroots

Good handful of dill

100g Soy yoghurt

1 x garlic

1 x red onion

100ml white wine vinegar

100ml water

salt, sugar and pepper

METHOD

Drain your chickpeas and give them a good rinse

Peel and dice your beetroot and either roast or boil until tender. Pre cooked will also work perfectly here and give an even better Barbie pink colour!

Dressing time! I used to hate yoghurt, now I love it. wh Thank you for your understanding xxx Grate your garlic into the yoghurt, add a generous pinch of salt and pepper and half of your chopped dill. Give it a good mix and allow to stand for a minute.

These quick pickled onions will change your life, so good on everything and keep really well in a jar in the fridge. Just slice your red onion finely, scrunch in a good pinch of salt and the same of sugar and set to one side. Heat your vinegar and water together in a pan gently, when hot add to the onion and set aside again!

Now just combine the chickpeas, yoghurt dressing, beetroot and the rest of the dill together, check your seasoning and lay your pickled onions on top. GORGE. Good enough to eat from the bowl tbh but also a delish side for tofish!
